Pāi huángguā (拍黄瓜) or smacked cucumber is a refreshing Hunanese appetizer of cold cucumbers dressed with garlic, dried or fresh chili pepper and vinegar. It takes its name from the preparation step of smacking the sliced cucumber with the side of a cleaver to open up the vegetable to absorb the seasoning.
