Omelette Joinville is a French haute cuisine dish, based on an omelette Nantua, garnished with diced mushrooms and truffles, and without the trussed crayfish.
It is named for Francois de Joinville, Duc d'Orleans, the 3rd son of Louis Philippe (1818-1900).
