Mushy peas is a British dish of fresh green peas pureed with butter, salt, and pepper. Cream or mint may optionally be added. It is a traditional accompaniment to fish and chips, and is also often served with boiled beef or ham.
When fresh peas are not available, dried marrowfat peas are the pea of choice. The best peas are made by rubbing freshly cooked peas through a seive and then beating them with a wooden spoon.
