Matsutake is an edible mushroom that is prized in Japanese cooking, though the mushroom grows across East Asia, Europe, and North America. Matsutake mushrooms are foraged heavily and are difficult to find.
Cultivation of the matsutake has so far been unsuccessful. So-called "white matsutake" (Tricholoma magnivelare), a wild-growing American variety, is a less-expensive alternative.
