Kilawin is a Filipino dish of lightly cooked meat, accented with sour foods including calamansi, dayap, biasong, kamias, tamarind, green mango, balimbing, and green sineguela. It is traditionally eaten with papaít, usually the bile extracted from the animal's gall bladder.

Word origins

From 17th century Spanish cquilao, from Visayan kilaw, "to eat raw".
