Khoresh Karafs is an Iranian celery stew (also called Persian celery stew). Like other khoresh stews, it uses a long slow stewing with generous use of herbs, especially mint and parsley, and spices. Often, a meat such as lamb or chicken is added to the stew.
When tomato is added to the stew, it becomes Khoresh Karafs-Ghermez.
