Junsai is a water plant (Brasenia schreberi), which produces shoots with a mucilaginous coating that causes them to float in water. They are cultivated in China and Japan, where they are used in soups, as pickles, and in
hot pots
. They are expensive and have very little flavor, but are appreciated for their texture.
