Ishiyaki is a Japanese cooking technique in foods are cooked directly on hot stones. It is associated both with street food, especially chestnuts and sweet potatoes , and with a fine dining practice in which a hot stone is presented to the diner along with raw meats, such as abalone, which are briefly cooked on the stone, and then dipped in sauce.
