Honzen ryōri is a formal style of meal preparation from Japan. The structure of the meal is based on ichijū-sansai ("one soup, three sides"), which is expanded to two soups and five or seven sides, or three soups and eleven sides, which must emphasize variety and seasonality. The style has largely disappeared today, though it was a major influence on kaiseki ryōri .
