Head mustard is a type of mustard greens. It is a popular mustard green for Cantonese cooking, where it is sometimes called dai gai choi – but be aware that large petiole mustard is also sometimes called dai gai choi. It is a common mustard variety used to make haam choy, Cantonese pickled mustard.
