Hamachi, also called yellowtail or Japanese amberjack (Seriola quinqueradiata), is a species of fish native to the northwest Pacific Ocean that is prized for sushi. It is sometimes listed on sushi menus as "yellowtail tuna," but is unrelated to the tuna family.
Most commercial yellowtail is now farmed commercially. In Japanese, the term inada is used for young hamachi, under one year of age, while hamachi refers to juveniles, and buri refers to full-grown adults.
