Grilled eggplant is a dish of eggplants, peeled and sliced lengthwise or into slices, brushed with oil, and cooked over direct heat. Depending on the breed of eggplant, the slices may need to be salted for 30 minutes first to draw out bitterness; Chinese eggplant and Nasu are usually sweeter and do not need this step.
