Fond (from French fonds de cuisine, roughly "foundation of the kitchen") is used, in American practice, to refer to the flavor-rich solids that remain in a pan after cooking, which are deglazed with liquid to produce a stock, broth, or sauce.
In French practice, the solids are called les sucs, and fond refers to the liquid created by this process.
