Artichoke bottom

Artichoke bottoms (in French, fond d'artichauts) are the soft bases of the artichoke, below the choke, consisting of a circular segment of the artichoke heart. This is the tenderest and most flavorful part of the artichoke, and is traditionally used for luxurious dishes.
