Sometimes confused with the silver pomfret, which is called "pompano" in some markets; also not be to be confused with golden pompano, the more common species in Asia.
The Florida pompano (Trachinotus carolinus) is a species of pompano, a seawater fish found along the western coast of the Atlantic Ocean. It is popular for both sport and commercial fishing.
Florida pompano are typically less than 4 pounds (1.8 kg), with a body that is short and deep. The fillets have even thickness, with flesh that cooks up white and opaque but rich, mild flavor. In New Orleans, it is prepared en papillote with a white wine sauce.
Unlike the snubnose pompano, which is farmed in a number of Asian countries, the Florida pompano is currently only a wild-caught species.
