Enchiladas suizas are a Mexican enchilada variant made by adding cream to an herb and chili sauce and topping the enchiladas with cheese. Unlike a conventional enchilada preparation, enchiladas suizas are baked in the oven until the cheese is melted.
The term "suiza" means "Swiss"; the dish is called "Swiss enchiladas" because of a dish popularized by the Sanborns cafeteria chain in the 20th century.
