Earthquake cake is an American cake, usually associated with Southern cuisine made by enriching a boxed cake mix with nuts, coconut, or chocolate and adding a cream cheese swirl. The name also occasionally refers to a flourless chocolate cake that has been allowed to rise and then collapse, creating a cracked, sunken appearance which is then dusted with confectioner's sugar.
