Compound coating, or summer coating, is a manufactured chocolate product in which some or all of the cocoa butter is replaced with another fat that is hard at room temperature. Compound coatings can be used to make enrobed confections that are similar to dipped chocolates, but are much easier to work with because they do not require tempering. They generally lack the fine flavor and mouthfeel of pure chocolate.
