Château Potatoes, or pomme de terre château, is a classical French potato preparation. It uses new potatoes, or larger potatoes cut to the size of new potatoes, which are sautéed with butter, and cooked on the stove top or in the oven until golden, and served garnished with parsley. They are a traditional accompaniment to Chateaubriand steak steak and tournedos à la béarnaise.
