Carne adovada is a dish of pork with New Mexico chiles (New Mexico chile, Chimayo chile, or guajillo), garlic, oregano, cumin, and lemon, lime, or vinegar. The pork is marinated in the sauce and the whole is then baked at low temperature for an extended period. It is a specialty of American New Mexico cuisine.
