Caramelized rice is a dish from the Parsi community in India, traditionally served with dhansak, a meat and lentil stew. It is made by cooking spices in ghee, and then adding chopped onions with a small amount of sugar, and allowing them to caramelize, before adding the uncooked rice and water and allowing the rice to cook normally.
