Cajeta is a Mexican confection of slow-cooked goat's milk, cinnamon, and brown sugar. It is thick, dark brown, and sticky, with very deep caramel flavor. It is similar to dulce de leche, which is made with cow's milk, but has a spicier and darker flavor. Like dulce de leche, it can be eaten alone, used as a spread or filling, or as a topping for ice creams.
Production of cajeta is associated with the city of Celaya in Guanajuato.
