Brie is a soft, rinded French cow's milk cheese. It is a pale, aromatic soft cheese of pale yellow with a well-developed white mold rind. The cheese is served at room temperature and the rind is eaten with the center.
Note that Brie is not an AOC-protected cheese product; consumers should be aware that only Brie de Meaux and Brie de Melun have protected status, and since they are made with unpasteurized milk they can be difficult to import.

After Brie, region of northern France, corresponding to parts of modern Seine-et-Marne, Marne, and Aisne.
