Bott boi is a soup from the Pennsylvania Dutch cuisine of the United States. It is a chicken and dumplings dish made with large square noodles and a meat simmered in stock with vegetables. Saffron is a traditional seasoning for the soup owing to its historical cultivation in the Pennsylvania Dutch region.
