Belgian endive

Belgian endive (Cichorium intybus), called chicory in the UK and witloof Australia, in is a cultivated form of leaf chicory (not a true endive), which is sprouted indoors in dark rooms, causing the plant to form a small, tight head of pale, bitter leaves.
