Bavaroise, or Bavarian tea, is a sweet beverage that is now archaic; the name is not to be confused with Bavarian cream, which is much more common cold dessert.
Bavaroise is made by whisking strong tea with an egg yolk and sugar syrup until frothy, and then thining with boiled milk and kirschwasser. It can be flavored with rum, maraschino, or chocolate. In the 18th century, it was sweetened with maidenhair syrup, though this was later changed to simple syrup.
