A bain-marie is a cooking vessel which is half-filled with water, with another, smaller vessel placed inside it, so that the interior vessel is slowly heated and avoids extremes of temperature. It is very similar in conception to a double boiler. The term can also be used for a similar vessel used to keep cooked dishes warm during service.
