Ammonium carbonate, also known as baker's ammonia or carbonate of ammonia, is a chemical leavener that has largely fallen out of use but is still called for in some historical recipes and specialty items like springerle. Historically, it was derived from the horns of elk, and was known as salt of hartshorn.
