Westfälische quarkspeise (German, "Westphalian cheese dish") is a dessert from the Westphalia region of Germany made by layering sweetened pumpernickel bread with fruit compote and sweetened quark cheese (as in quarkspeise).
It is similar in conception to a trifle, but features the Westphalian flavor of pumpernickel.
