Tournedos à la périgourdine is a French dish of beef tournedos sautéed in butter and served on a grilled or fried slice of bread (croûton), topped with sliced truffles heated in the cooking butter, and finished with a pan sauce of Madeira and demi-glace. It is nearly identical to Tournedos Rossini but excludes the foie gras.
