Topfengolatsche (plural Topfengolatschen) is a popular Viennese pastry. It has its origins in the Czech koláč, a round, yeast-based pastry with an exposed filling, often flavored with poppy seeds, plum jam, or Topfen. As the pastry crossed into Austria, it evolved into a square-shaped, puff pastry wrapped around a square of Topfen.
The term "Golatsche" first appeared in a 17th-century Viennese cookbook on Bohemian cuisine. Topfen, the key ingredient, is a fresh cheese similar to German Quark, with a grainy texture often scented with lemon zest. While some debate the inclusion of raisins, their sweetness is generally welcomed to balance the richness of the Topfen.
