Tilslørte bondepiker (Norwegian, "veiled peasant girls") is a traditional Scandinavian dessert, made by layering a fruit compote with whipped crumb and caramelized breadcrumbs, typically in a glass or bowl to show off the layers. Apples are most typically used though pears and plums are occasionally seen and were used historically. Rusks or sponge cake are often used in place of breadcrumbs. It can be thought of a cousin to a parfait or a fool.
In Sweden, it is Änglamat ("angel food"), in Denmark, Bondepige med slør ("veiled peasant girls"), and in Germany Verschleiertes Bauernmädchen ("veiled peasant girl"). In Finland, it is called Pappilan hätävara ("pastor's emergency"), which alludes to the fact that it can be prepared quickly when an important visitor arrives at your door unexpectedly!
