Tamari (sometimes incorrectly called tamari shoyu) is a seasoning sauce used in Japanese cooking that plays a similar role to shoyu soy sauce, but is made with a different process. Tamari is actually a by-product of miso production, which means that, unlike Japanese shoyu soy sauce which is usually made with wheat , it is gluten-free.
