Tajarin (pronounced "tie-yah-REEN") is the Piedmontese version of tagliatelle, a style of tagliolini. They are an egg pasta made with a high proportion of egg yolk, giving them a delicate texture and rich flavor.
Despite once being considered poverty food, they are now a luxury item, typically served with butter sauce as in tajarin al burro, or with shaved white truffles, as in tajarin al tartufo bianco d'Alba.
