Solyanka is a thick and sour soup of Russian origin that is common in Russia, Ukraine, Belarus, and other states of the former Soviet Union and certain parts of the former Eastern Bloc, including the eastern parts of Germany. The core ingredients are pickled mushrooms or cucumbers, cabbage, smetana, and dill.
Many variations of solyanka can be built on top of the flavor base. For meat solyanka, beef, veal, ham, sausages, or chicken could be combined with onions, potatoes, olives, and other spices. Salt-cured and smoked fish, such as salmon or trout could be used. Mushroom solyanka, with cabbage and vinegar, is also made.
