Shimeji is a family of edible mushrooms native to East Asia, used in Japanese cooking. It is used in stir-fries, soups, stews, and sauces.
Several species are sold as shimeji, including buna-shimeji, known in English as brown beech or brown clamshell mushroom; bunapi-shimeji, white beech or white clamshell mushroom; hatake-shimeji, and hon-shimeji.
