Sauternes (note trailing 's', always capitalized) is a distinctive French dessert wine made in the Sauternes Appelation d'Origin Controlée region of France. It is the inspiration for, but distinct from, the American semi-generic sweet white dessert wine called sauterne (no trailing 's', lower-case). Many American recipes get these confused, and it is likely that sauterne is a good substitute if an American recipe calls for Sauternes.
