San Marcos cake is a traditional Spanish cake made with layers of Genoise sponge, whipped cream, whipped cream with cocoa, and a layer of caramelized sweetened egg yolk.
The use of caramelized egg yolk is a distinctive culinary practice of Castile and León; see also yema quemada and yemas de Santa Teresa.
