Salade Périgourdine is a composed salad from the southwest of France. The essential ingredient is gésiers confit (duck gizzards in confit), served over tender salad greens; after that, many other local specialties including cured duck breast, foie gras, tomatoes, bacon, crispy duck skin, walnuts, and garlic potatoes may be included.
