Pierna de Cerdo Adobada is a common preparation of roast pork leg across Mexico, the American Southwest, Latin America, and the Philippines. It is made by soaking toasted dried chiles in a vinegar, sugar, onion, and garlic base, and then blending the chiles with spices and epazote to create a paste which is rubbed over the meat and allowed to marinate for several hours or overnight before roasting.
