Pan di Spagna is a form of sponge cake, popular in Italian cuisine. It is similar to Genoise cake.
Legend has it that the Genoese chef Giobatta Cabona presented a Génoise cake to the Spanish court, and that the cake was so well received that it took the name of España in honor of the event.
