Oaxaca cheese or queso Oaxaca, also known as Asadero or Quesillo, is a semi-hard Mexican cow's milk cheese, originally produced in the state of Oaxaca. It has a texture similar to mozzarella or string cheese, with a mildly tangy flavor reminiscent of Monterey Jack.
