Mojete Manchego, also just called moje, is a traditional cold salad from the region of Castilla-La Mancha, Spain. It typically consists of ingredients such as tomatoes, peppers, onions, garlic, and olives, all combined with olive oil. Many chefs now add canned tuna or cod. It is best made several hours ahead of service to allow the flavors to blend.
It is a simple and refreshing dish, which is popular during the summer.
