Koikuchi soy sauce is the most common and popular type of shoyu (soy sauce) in Japan. Koikuchi means "dark," referring to the color of the sauce. Most soy sauce sold in America and Europe is in a koikuchi style.
Contrast usukuchi shoyu, which has a lighter color, less umami flavor, and more salt.
