Joe Booker Stew is a regional specialty of the state of Maine in the northeastern United States. It is made with stewed chunks of lean beef, rutabaga, potatoes, and carrots, topped with baking powder-raised parsley dumplings.
It appears to have become popular in the late 1800s among lumberjacks and ice workers, but no one is now certain who Joe Booker was.
