Jaternice is a Czech sausage, made with pork offal, especially liver, heart, and tongue, and barley. It is popular during the Masopust celebration from late January to mid-February, which is a pre-Lenten period associated with the winter slaughter, which traditionally would have been when pork offal had to be used quickly.
