Hyssop (Hyssopus officinalis) is an herb in in the mint family (Lamiaceae), which has been cultivated in the Mediterranean region since antiquity. It has a minty, lightly bitter flavor, and is often included in za'atar herb blends. It is also used extensively to flavor liqueurs, and is included in Chartreuse, Bénédictine, and many absinthes.
