Huesos de santo (Spanish, "saint's bones") are traditional desserts made from marzipan, white in color and with a long, cylindrical shape, originally filled with sweet egg yolk paste (yema) that resembles tibias (shinbones). In Spain, they are characteristic of pastry shops during the celebration of the days around All Saints' Day, along with buñuelos. Their appearance sometimes resembles that of reliquaries.
