Harvard beets are an American preparation of beets, typically cooked with sugar, vinegar, and butter. The origin of the name is obscure; it may be because of the similarity of the beet's color to the red of Harvard University's team jerseys, or due to a mispronunciation of a Boston-area restaurant called Harwood.
