Hard crack is one of the stages of sugar used in candy-making. It is reached when sugar is heated to between 146 and 154° C (295 to 309 °F). Sugar heated to this stage forms brittle threads when syrup is dropped into cold water. Candy made from hard crack sugar is hard candy .
